The Raspberry Inn's, Raspberry Muffins

Muffin Mix

* 4 cups all-purpose flour
* 1 ½ cups sugar
* 5 teaspoons baking powder
* 1 teaspoon salt
* 3 eggs
* 2 cups milk
* ½ cup melted butter


Raspberry Mix

* 1 cup raspberries
* ¼ cup chopped pecans
* 1/3 cup sugar
* ¼ teaspoon cinnamon
* ¼ teaspoon of nutmeg


Preheat oven to 400 Degrees Fahrenheit. Grease muffin pan.
In a large bowl, sift together the flour, sugar, baking powder and salt.
In a small bowl whisk the eggs lightly. Then stir in the milk and melted butter. With as few strokes as possible, stir the wet ingredients into the flour mixture.
Mix the remaining ingredients together. Lightly fold in raspberry mix. Spoon the batter into each muffin well, about 2/3rds full.
Bake for 20-25 minutes or until browned and a toothpick inserted in the centre comes out clean. Remove the muffins immediately from the pan and cool on a rack.
Yield: about 24 muffins.
Enjoy!! Trust me when I say you won't be able to eat just one.

 

Raspberry Breakfast Cake

This is a really easy recipe and our guests can’t seem to get enough!

· ¼ cup softened butter
· ¾ cup sugar
· 1 egg
· 2 cups all-purpose flour
· 2 teaspoons baking powder
· ½ teaspoon salt
· ½ cup milk
· 2 cups fresh raspberries

Topping
· ½ cup sugar
· 1/3 cup all-purpose flour
· ½ teaspoon ground cinnamon
· ¼ cup softened butter

Preheat oven to 350 degrees Fahrenheit. Grease a 13 x 9 x 2 inch baking pan

Cream the butter, sugar and egg

Combine flour, baking powder and salt and add to the butter mixture alternately with the milk, and mix after each addition. Fold in the raspberries and spread into pan.

For the topping, mix the sugar, flour, cinnamon and butter. Sprinkle over the batter in the pan.

Bake for 40-45 minutes or until a toothpick inserted in the centre comes out clean. Cool on a wire rack.

Cut into squares and serve warm or at room temperature.

 

Smoked Salmon and White Cheddar Bagel

· 8 eggs
· ½ cup Whipping Cream (not whipped J)
· Fresh Chives
· Fresh Parsley
· ¼ onion finely diced
· Dash Salt
· Dash Pepper
· 12 slices Smoked Salmon
· 4 Multi Grain Bagels
· ½ cup aged white cheddar cheese

Preheat oven to Grill setting.
Mix all the ingredients in a bowl. Scramble over medium heat just until they are slightly soft. Toast bagels then spread with butter. Spoon scrambled egg mixture onto each bagel half. Sprinkle with cheese. Put in oven and grill until cheese has melted.

Serve with a healthy serving of PEI Roasted Potatoes and a Half Grilled Tomato.
